It’s even being reimaged as other foods—cashew milk, cashew cheese, cashew ice cream, cashew mayo (the verdict’s still out about that one). So we did a little digging to find out why this nut is having a major moment right now, and why it tastes so amazing in dishes like next week’s Orange and Cashew Chicken Stir-Fry .
This creamy Vegan Queso Sauce doesn't contain an ounce of cheese but features nutty cashews, nutritional yeast, smoked paprika, and a hint of chili powder.
